Traditional French Lyon-shaped black steel frying pan.

Large handle angles up and away making it ideal for open fire cooking.

Carbon steel seasons like cast iron is less than half the weight, wont chip or crack and transfers heat faster for scrambling and searing.

11" dia.

8 1/2" handle

2lb. 11oz.

Heavy duty with large handle rivets and stout handle, these would still work best where weight is not an issue.

    I've been researching carbon pans since I have a hard time lifting my 12" cast iron pan anymore, but didn't want a non stick coating, or stainless ,that sticks everything. Carbon steel pans are lighter, and develops a natural non stick ability like cast.
    This pan has a good shape for frying and sautéing, and is high enough not to spill anything yet is easy to use a spatula in. The handle is long and gets hot, use a towel. The 11" size is plenty big enough for cooking for two people, The really nice thing is you can put it in the oven like cast and it will take blistering heat. I use it in the kitchen and it's developing a nice seasoning. There are other carbon pans available, the French ones are quite expensive and I have no experience with them, or any others, thus the 4 stars, but I doubt there would be a signifiant difference and Ben's price is very good.

    As far as I could tell, Ben is the only guy around who carri these and I looked online pretty hard. The big plus of this is that it’s uncoated carbon steel. Supposedly you can give it a few treatments to improve nonstick ability, but I haven’t done that yet. The coated pans imho are not suitable for high campfire heat. Maybe butane burner, but not actual fire or hot embers. The only difficulty with this pan is it has a permanent riveted handle which would make it cumbersome for back packs. It’s also heavy. That probably explains why most people opt for the handle free models. I do canoeing or car camping so weight is less of an issue. Nice size for real cooking.

    Bens sells good stuff. Shipping for an item like this is expensive but it got here fast and I think he’s only charging the actual cost. I’ve never met Ben, but he seems like a good guy and it’s good to be able to help the little guy sometimes.
